Rose prosciutto is a unique Istrian speciality. In addition to using only the highest quality raw meat, it is produced with aromatic herbs, garlic, sea salt and black pepper, which is a real rarity in the charcuterie world. The product is dried in air chambers, and when the infamous Bura storm starts, specially protected windows are opened to allow fresh dry air to dry each piece of meat. During ripening, the product is covered with "noble mold", giving the final note to the story of the uniqueness of the Istrian specialty. Due to slow drying and ripening, the texture of the meat is soft and moist with pleasant smell, typical for dried Istrian products.
Pisinium's range is awarded many gold medals by specialised local institutions, for its quality and traditional manufacturing practices.
Ingredients: pork leg without bone and skin, salt, sugar, preservatives: sodium nitrite, potassium nitrate, dextrose, antioxidant: sodium ascorbate. 100g of product was obtained by drying 167g of pork leg without bone and skin.
