Whatever you call it, is a true porky delicacy, however, with slightly less fat. Istrian žlomprt is an indispensable part of Istrian gastronomy, along with Istrian prosciutto, it was consumed mostly on special occasions. Due to slow drying and ripening (up to 6 weeks), the texture of the meat is soft and moist with pleasant smell, typical for dried Istrian products.
